About Skim Milk Powder and Nonfat Dry Milk
Skim Milk Powder and Nonfat Dry Milk are powdered dairy products obtained by removal of water from skim milk. Both skim milk powder and nonfat dry milk are almost identical in nutritional content. One key difference is that skim milk powder must contain at least 34% milk protein, while nonfat dry milk does not have a standardized protein level. These ingredients have wide applications in food applications including those for infants and the elderly. Milk powders have historically been shown to be susceptible to economically motivated adulteration; wide use of these ingredients in food products increases the potential risk to public health of adulteration.
